The time

Por incrível que pareça parece que o Outono chegou… devagar. O Sol ainda brilha e traz um calor de Verão mas o cheiro, esse, já é de Outono. A minha horta diz-me quando está na hora… Ontem passei o serão à volta de tachos de conserva. Comecei por fazer geleia de maçã que deixei a coar durante a noite. Mais rápida foi a compota de abóbora. Tive de usar o instinto e os conselhos da avó porque não tinha em casa nenhuma receita. 

Para 1,3 kg de abóbora usei cerca de 800g de açúcar que cozinhei durante cerca de 30 min com um pau de canela, raspa de um limão e sumo de uma laranja.
Passado esse tempo retirei os condimentos e reduzi tudo a puré. Deixei apurar mais um pouco ao lume e pronto! Sobrou um pouquinho que provamos hoje ao pequeno almoço. Ficou tão boa!


Amazingly, it seems that autumn has arrived ... slowly. The sun still shines and brings the warmth of the summer but the smell tell us that is already autumn. My veg garden tells me when it's time ... Yesterday I spent the evening around pots of preserves. I started by making apple jelly that I left filter overnight. Faster was the pumpkin compote. I had to use my instinct and the advices of the grandmother because I have no recipe at home!

To 1.3 kg of pumpkin I used about 800g of sugar. I cooked both for about 30 min with a cinnamon stick, zest of one lemon and the juice of an orange. 
After this time I removed all the spices and reduce the pumpkin into puree. I warm it a bit more in the heat and voila! I tried a little bit leftover today for breakfast. He is so good!

Rustic apple tart

Se há coisa que os Portugueses conhecem bem é uma boa tarte de maçã. E quanto mais simples melhor!

Trago uma receita que experimentei recentemente e que adaptei apenas um pouco a partir da receita original do programa de televisão "O Prato do Dia" com Filipa Gomes. É tão simples que realça o sabor da maçã ao máximo! E, como não tem creme e a massa não leva ovos torna-se numa sobremesa bastante saudável, a não ser que caiam na tentação de lhe acrescentar uma companhia à altura: uma bola de gelado de baunilha!

Ingredientes:

Para a base:
1/2 chávena Farinha com Fermento
1/2 chávena Farinha Integral (se não tiver pode usar farinha de trigo normal)
1 c. chá de açúcar branco granulado
3 c. sopa de água gelada (junto-lhe uns cubos de gelo para arrefecer bem)
90g de manteiga fria (do frigorífico)

Para o recheio:
4  maçãs (eu usei maçã Fuji que era o que tinha em casa e confesso que ficou muito saborosa)
4 c. sopa de açúcar mascavado (ou amarelo) e mais para polvilhar
1 c. sopa de farinha Maizena
2 c. sopa de manteiga derretida (e mais para pincelar)
1/2 c. chá Canela
1/2 c. chá Gengibre
Sumo e raspas de meio limão
Uma pitada de noz-moscada

Geleia de marmelo ou compota de alperce para pincelar.
Açúcar confeiteiro para polvilhar.


Para a base junte a farinha com fermento e a farinha integral, o açúcar branco e as 90g de manteiga num processador e pulse até ter um granulado. Passe para uma taça e acrescente a água gelada. Com as mãos, sem amassar, envolva tudo e forme uma bola. Leve ao frigorífico pelo menos 30 minutos (pode deixar durante a noite). 
Entretanto, descasque as maçãs e corte-as em gomos. Regue as maçãs com o sumo e raspa de meio limão para evitar que fiquem escuras e polvilhe-as com o açúcar mascavado, o amido de milho, a manteiga derretida, a noz-moscada, canela e gengibre.
Estenda a massa o melhor que conseguir usando o rolo. A massa é muito areada e por isso dificilmente conseguirá uma forma perfeita mas, já que é uma tarte rústica,  é importante evitar amassa-la muito, caso contrário não ficará estaladiça! Depois de estendida, tranfira-a para um tabuleiro ou tarteira com fundo amovível. Disponha a maçã em círculos, polvilhe com um pouco de açúcar mascavado e, no fim, dobre a berma de massa para dentro e pincele-a com um pouco de manteiga.
Leve ao forno cerca de 40 minutos a 180ºC.
Retire do forno e deixe arrefecer. Pincele ligeiramente com um pouco de geleia para caramelizar e polvilhe açúcar em pó na berma de massa.



If there's one thing the Portuguese know well, is a good apple tart. And, most of all, the simpler it is, the better !

I recently tried a recipe that I adapted a bit from the original recipe from the portuguese television show "The Dish of the Day" with Filipa Gomes in 24Kitchen. It's so simple that enhances the flavor of the apple as no other! And, as it has no cream and the pastry does have eggs in the mixture it becomes a fairly healthy dessert, unless you fall into the temptation of adding the perfect company: a scoop of vanilla ice cream!

Ingredients:

For the pastry:
1/2 cup flour with yeast added
1/2 cup whole flour ( you can use regular flour )
1 teaspoon of granulated white sugar
3 tablespoon of chilled water ( add ice cubes to cool)
90g of cold butter

For the filling :
4 apples (I used Fuji apple that was what I had at home and I confess that it was very tasty)
4 tablespoon of brown (or yellow) sugar and more for final dusting
1 tablespoon of cornstarch
2 tablespoon of melted butter (more for brushing)
1/2 teaspoon of cinnamon
1/2 teaspoon of ginger 
Juice and zest of half a lemon
A pinch of nutmeg

Apricot jam to glaze.
Icing sugar for dusting .


For the pastry combine the flours, the white sugar and 90g butter in a food processor and pulse until you have a grainy dough. Move it to a bowl and add the iced water. With your hands, without kneading , wrap it and form a ball. Refrigerate at least 30 minutes (can leave it overnight).
Meanwhile, peel the apples and cut them into wedges. Drizzle the apples with the juice an zest of half a lemon to prevent them becoming dark and sprinkle with brown sugar, cornstarch, melted butter, nutmeg, cinnamon and ginger.
Roll out the pastry as best you can. The pastry scraps a little and therefore it will hardly have the perfect shape but, since it is a rustic tart, it is important to avoid knead it too much, otherwise it will not be crunchy! Pass it to a board or tart tin with removable bottom. Arrange the apples in circles, sprinkle with a little of brown sugar and in the end, fold the edges of pastry inside and brush it with a little butter.
Bake about 40 minutes at 180 º C.
Remove from oven and let cool. Brush the apples, lightly, with a little jam to caramelize and sprinkle powdered sugar on pastry border.

Corn cookies!!

Adoro fazer bolachas! Se há algo reconfortante em passar uma tarde na cozinha enquanto a chuva forte cai lá fora são bolachas acabadas de fazer. Mas nem sempre temos tempo ou disposição para esticar a massa e usar forminhas bonitas para cortar as bolachas e esperar que a massa não se tenha colado à bancada! Porque por vezes isso acontece. 
Estas bolachinhas de farinha de milho são rápidas de fazer, a massa não precisa de ir ao frigorífico, moldam-se facilmente em letras e outras formas com as mãos daqueles que quiserem participar. Depois é só cozer e deixar arrefecer. São leves, com uma cor amarela muito suave, de sabor inconfundível e, o melhor de tudo, não incluem manteiga ou outro tipo de gordura, apenas farinha, açúcar e ovo!

Ingredientes:

1 chávena de farinha de trigo
1 chávena de farinha de milho
1 chávena de farinha Maizena
1 chávena de açúcar
1 colher de sobremesa de fermento
4 ovos

Usando um processador de cozinha (se não tiver pode usar as mãos!) misture todos os ingredientes até obter uma massa homogénea. Molde formas com pequenas porções de massa: "esses", corações, nós, torcidos, letras e números e coza as bolachinhas durante 10 minutos a 180 graus. Esta receita dá para aproximadamente 5 tabuleiros de bolachinhas, dependendo do tamanho de cada uma!



I love make cookies! If there is something comforting about spending an afternoon in the kitchen while the rain falls outside the window, it is cookies in the oven. However, sometimes we don't have the time or motivation to stretch the dough and use our fancy molds to cut the biscuits, waiting that the dough does not get glued to the bench! Because sometimes it happens.
These corn cookies are quick to make, the dough does not need to go into the fridge, they are easily molded into letters and other forms by the hands of those who wish to participate! Then just bake them and let them to cool. They are light, of a gorgeous pale yellow, with an unmistakable flavor and, best of all, the recipe does not include butter, just flour, sugar and egg!

ingredients:

1 cup of flour
1 cup of cornmeal
1 cup of flour Cornstarch
1 cup of sugar
1 teaspoon of baking powder
4 eggs

Using a food processor ( you can use your hands!) mix all ingredients until you get a smooth dough. Create different forms with small portions of dough: "s", hearts, twists, letters or numbers, and bake them for 10 minutes at 180ºC. This recipe makes about 5 trays of cookies, depending on the size!

"Filhós de Forma"... pronounced in english as "feelhos de forma"!!

As receitas de Natal em Portugal são de nos fazer babar. Das mais curiosas escolhi para partilhar os Filhós de forma. São tão originais com as suas formas variadas e o seu aroma a especiarias que não hesitei em experimentar.


Ingredientes:

3 ovos
120 ml de leite
raspa de uma laranja
1,5 colher de sopa de aguardente
1 pitada de sal
125g de farinha

e ainda açúcar fino e canela para polvilhar!

O procedimento: 

Juntar todos os ingredientes numa taça e misturar bem com uma vara de aramas para evitar criar grumos com a farinha. Aquecer óleo vegetal ou azeite numa frigideira (cerca de 4cm de altura). Aquecer as formas de filhós de forma no óleo quente. Mergulhar a forma sem deixar que a massa suba a mais de meio da altura da forma (caso contrário a forma ficará presa ao fritar) e depois no óleo! Sacudir a forma para libertar o filhó e deixar alourar. Repetir o processo mudando de forma de vez em quando para que não aqueça excessivamente. Enxugar um pouco os filhós e polvilhar com açúcar e canela. Hum…..!!



Portuguese christmas recipes makes you slobber! Among the most curious to share, I chose "Filhós de forma" a kind of fried shapes. They are so original with their cute forms and their cinnamon aroma! I couldn't hesitate to try it!

Ingredients:

3 eggs
120ml of milk
orange zest
1,5 tbs of brandy
pinch of slat
125g of flour

and sugar and cinnamon to powder the filhós!

Procedure:

Add all the ingredients in a bowl and mix well to avoid lumps of flour. I usually start with the wet ingredients. Heat vegetable oil or olive oil in a frying pan (about 4cm height). Heat the special shapes for filhós in the hot oil. Dip no more than half the height of the shape into the dough (otherwise the shape will be trapped during frying) and then dip it into the oil again! Shake the shape to release it from the filhó. Repeat the process and change the shapes, time to time, so that they don't overheat. Dry the filhós a little in kitchen paper and sprinkle them with sugar and cinnamon. Hum.....!

Off the scale hot chocolate

Para quem não aprecia leite achocolatado, um chocolate quente não é grande entusiasmo! Mas confesso que aquele aroma e aspecto cremoso dá-me sempre vontade de provar mais uma vez na esperança de que haja uma receita que seja surpreendente. 
Já provei chocolate quente em vários sítios e até em casa de amigos mas nunca fiquei convencida de que teria encontrado aquela receita. 
Hoje, o meu calendário de advento recomendava-me fazer chocolate quente com marshmallows… por isso esmerei-me na pesquisa e comecei exactamente na receita que me deu a volta à cabeça! O "Epic Hot Chocolate" do Jamie Oliver. Esta é uma receita das séries de Natal de Jamie e é, sem sombra de dúvida, off the scale!
O melhor é que se não precisarem da mistura toda podem guardar para outra vez. Assim, basta adicionar ao leite.

To those that don't apreciate chocolate milk, a hot chocolate is not enthusiastic! However, I must say that the aroma and creamy look of a good hot chocolate cup always gives me a desire of trying it again with the hope for an amazing recipe.
I already tasted hot chocolate in several places and even at my friend's home, but I am not convinced that I found "the" recipe.
Today, my advent calendar proposes do homemade hot chocolate with marshmallows… so, I tried to find a recipe. Hopefully, I started exactly with the recipe that blowed my mind! The "Epic Hot Chocolate" from the christmas series of Jamie Oliver. This hot chocolate is, definitely, off the scale!
And the best is that if you don't need the all amount of the mixture you can store it for another time. You only need to add it to the milk.
